A key part of the job is working with the head chef and department managers to ensure that our ingredients and other purchases are as environmentally responsible as possible. This is an ongoing challenge and we are always looking at how we can improve our sourcing, energy and water use and our recycling. Amy works on sharing best practice with other organisations and gives tours and talks to groups who are interested in our operation.

In addition, she is involved with a number of local and regional groups in helping to further the sustainable development agenda. These include Bristol Green Capital, Sustainability South West, Bristol Food Links, Bristol Sustainability Network and Bristol Harbourside Forum.
