A series of short, sharp and fun essential skills workshops for all, designed to build confidence and repertoire on the way to preparing a simple delicious meal to eat as a group at the end of the session. the Steak House

Cook the perfect steak! Prepare and cook your own perfect steak – then eat it complete with accompanying seasonal sides and a spectacular sauce which you’ll make from scratch.You’ll learn about the different cuts, cooking methods and how to cook steak to order as you go.

Learn how to make two simple and delicious puddings from scratch, one will be hot and one cold. You’ll learn new techniques and gain essential hints, tips and techniques as you go.

Learn how to make three fresh, quick wholesome and tasty seasonal suppers from scratch. Get great tips on planning ahead and buying quality produce as well as picking up some new skills.

the Veggie Box 

Love vegetables or vegetarian food, but tired of the same boring freezer meat substitutes? Learn delicious quick vegetarian recipes to add to your repertoire. We’ll focus on vegetables that are in season and at their best with a different menu each session to reflect the changes. We’ll includes one overlooked or under-used vegetable per session to promote their use and build your knowledge and palate.

Love food with a KICK? Come and learn how to make a great curry from scratch, (and how to rescue it if it goes wrong!) whilst building your confidence with using fresh spices and herbs in your cooking.

Butchery Knife Skills

This essential session for all meat lovers is designed to give you the know-how and confidence you’ll need to butcher your own meat at home. Watch a detailed demonstration delivered by our experienced chef before getting hands-on and trying out your newly acquired knife knowledge. Among other things you’ll learn how to correctly bone, chop, slice and cook your way to two impressive and delicious dishes.

the Marvelous Med

A naturally healthy diet rich in grains, pulses, vegetables, fruit, nuts, plenty of fish and olive oil and packed full of rich flavours, aromas and colours to boot! This makes the Mediterranean an ideal focus for a master class to inspire simple, fresh, healthy, delicious cooking. You’ll work your way through three recipes, each from a different region, guided by our experienced chef, and then sit and enjoy them with a glass of matching Med vino!

the Perfect Pastry

Learn how to make ‘exceedingly good’ pastry as you get hands-on with creating both sweet and savoury under our pastry chefs expert guidance, picking up essential hints & tips along the way. This class aims to inspire and give you confidence to experiment and create great pastries of your own.

Sauces & Stocks from Scratch 

Take your cooking to the next level as you learn to make your own stock and restaurant quality-sauces from scratch in this professional skills master class. You’ll watch detailed demonstrations from our experienced chef - tutor, who’ll show you essential techniques for making the key sauces; emulsion (e.g. Mayonnaise, Hollandaise), flour based pan (e.g. Béchamel), composite (e.g. pesto, Salsa) and reduction (e.g. Jus). Then it’s your turn as you get hands-on to try out a few of them for yourself to enjoy with your meal!

the Perfect Dessert

Learn to make highly impressive and gloriously indulgent restaurant quality desserts with top tips from our professional chef on combinations, techniques, and the all-important wow-factor of presentation! Then sample your dishes with dessert wine chosen by the wine school – heavenly!

the Fish Course 

Take the fear factor out of preparing and cooking fish from scratch and increase your knowledge of the fish counter in this series of one night fish master classes. Working with an experienced fishmonger and a professional chef you’ll focus on two fish and one shellfish per session, looking at what’s in season and at its best at the time of the class. Improve your knife skills as you get hands on with filleting and preparation then cook your way to two delicious dishes enjoyed with a glass of matching wine.

the Sushi & Sake Session

Spend the afternoon with a professional sushi chef and a wine tutor as you make your own Nigiri and Maki, learn how to cut Sashimi, and enjoy a relaxed tutored tasting of three quality sake wines presented by the wine school to enjoy with the delicious sushi you have made, you’ll even make enough to take home. Oh yes, and there’s a bottle of Sake to take home as a prize for best sushi made on the day!

the Tapas & Wine Session 

In this spectacular Spanish session you’ll make seven delicious tapas dishes with the help of our professional chef and enjoy a relaxed tutored tasting of seven quality Spanish regional wines, each chosen to match a dish and delivered by the wine school as you taste the two together! Come and celebrate one of the world’s most ideal partnerships of food & wine and learn a little about the Spanish regions and culture at the same time.

the ULTIMATE Food & Wine matching Session

An absolute for all foodies! Spend the afternoon in the company of a professional chef and a wine tutor, who’ll show you the principles of food & wine matching in a fun, hands-on way. You’ll watch delicious sample dishes made in front of you by our chef, picking up essential cooking tips and techniques along the way, then sample them with their perfect matching wine partner, finding out what does and doesn’t work well together – and why!

Essential Indian Cookery - with Monisha Bharadwaj

This fun, informative hands on day will show you that Indian home style cooking is easy, fuss-free, healthy and delicious. Our expert tutor will teach you how to make authentic low fat curries from scratch, and give you the understanding of how to use spices to create vibrant dishes from different parts of India.

Born in Mumbai, Monisha Bharadwaj is passionate about all things Indian, and writes regularly for The Sunday Telegraph, Waitrose Food Illustrated and Elle. Her book ‘Stylish Indian in Minutes’ was awarded Cookery Book of the Year by the guild of Food Writers, and has been a regular presenter and guest chef for the BBC, LBC, The Food Network (USA) and Carlton Food Network.

the ULTIMATE Italian Session - with Alex Murray 

A whistle-stop culinary tour for all Italophiles! Over the course of a relaxed and fun-packed day you’ll learn how to make four fantastic traditional Italian courses from scratch including a traditional soup with fresh Italian bread, a seafood starter, handmade pasta with fresh pasta sauce, and to top it all off, a delicious traditional Italian dessert. Follow this up with a wine tasting of matching Italian wines by the wine school before you sit down to enjoy them with what you’ve made – Bellisimo!

Alex Murray has been chef-proprietor of Bordeaux Quay since November 2009. He spends several days of his working week in the kitchens alongside the head chef at the multi-award winning restaurant. Achievements at Bordeaux Quay include two AA rosettes and three stars from the Sustainable Restaurant Association. Alex is passionate about cooking with the finest naturally reared ingredients from the locality, Italy & France.
