Water use

Water is a vitally important resource but is often taken for granted. It takes a great deal of energy to process water to drinking standard and yet much of this water is flushed straight down the toilet.

Our dishwashers are designed to use less water and our toilets have small cisterns that are fed by a rainwater harvesting system that collects water from our roof. We also train our staff to be aware of their water consumption and minimise it wherever we can.

The bottled water we serve in the restaurant and brasserie is tap water that has been filtered and chilled. It is served in reusable glass bottles and we offer it as a free alternative to bottled mineral water.
